2 mangoes1 punnet cherry tomatoes200g soft goats cheese (deli or supermarkets)1 bunch basil2 sheets of puff pastry2 tbs olive oilsalt and pepper

1. Cut puff pastry sheets into 4 even squares and bake them at 180 degrees until golden.
2. Meanwhile slice mango and ½ cherry tomatoes and pick basil, mix together in a bowl, season and add olive oil.
3. Once the pastry has cooled slightly push them in the middle and add the mango mix, crumble goats cheese over and serve.
