Mango Salsa with Grilled White Fish

Ingredients

4 x 150g pieces white flaky fish (eg. Snapper, Whiting)
2 Queensland mangoes
2 avocados
1 red onion
parsley
salt and pepper
oil
lemon juice

Makes:

4 portions

Prep time:

10 minutes

Cooking time:

8 minutes

Method

1. Dice mango, avocado and onion then add the parsley, salt, pepper and lemon juice.

2. Season the fish and pan fry until just cooked.

3. Spoon Salsa on top and serve immediately.
