recipe to the exclusive Australian Mangoes
and Crystal Bay Prawns Chef’s competition.
Luis was one of many who shared a delicious
recipe from their menu and was declared the
winner by the Australian Mango Industry.
CRYSTAL BAY PRAWNS WITH MANGO & MELON
Ingredients
400g Crystal Bay prawns
1 mango
350g honeydew melon, diced
8 cherry tomato, halved
1 cup rocket leaves
1 cucumber, sliced
Fresh mint
Dressing
2 tablespoon olive oil
Juice of 1 lemon
1 tablespoon clear honey
2 tablespoon chopped mint
Method
1. Halve mango lengthways cutting down each side of the stone, cut in cube.
2. Remove prawns from the refrigerator and add mango, melon and tomato. Gently stir together.
3. Arrange rocket and cucumber. Spoon the prawn mixture into the centre. Garnish with fresh mint.
For the sauce
4. Wisk all together in a large bowl. Season with pepper. Add prawns to the dressing, cover marinade and place in refrigerator for about 30 min to 1 hour.
